I thought it would be fitting to make a post all about my Thanksgiving this year! ( We still have a few hours until it’s really over, and calories will starting counting again). This is the first year that my family cooked a vegan thanksgiving. I was grateful for the chance to have the family together and customize classical thanksgiving dishes to our liking. Although we are not tremendously daring when it comes to trying out new dishes, it was our first time preparing these tofu “turkey” cutlets. The meaning of Thanksgiving can often become lost in translation amidst the frenzy of super sales and copious amounts of gravy, so it’s important to reflect on what one is truly thankful for. In our daily routines, we become accustomed to a fast-paced way of life that we often forget what is right in front of us. Whether you celebrated with your friends and/or family this year, remember this is a time to come together and to appreciate the meaningful people in our lives (furry friends included!).
